Need I say more? The title alone makes it sound tasty. I purchased a $10 special edition magazine from my favorite food magazine, Cuisine at Home. It's called Cuisine Lite. Several 30-minute menu fixes and 80 recipes all under 400 calories. As much as I cook at home, I like to keep lighter options to the menu. We generally eat healthy and I always welcome new fixings. I've also included the nutritional info for those who want the details. The chicken is sweet and spicy making it full of flavor. You can serve it with your choice of vegetables; cauliflower, green beans, corn, red potatoes just to name a few.
Spicy Garlic Chicken with Lemon Glaze
INGREDIENTS
2 boneless, skinless chicken breast halves
1/4 tsp. kosher salt
1/8 tsp. ground black pepper
1/4 cup panko bread crumbs

2 tsp. minced garlic
1/4 tsp. dried oregano
2 Tbsp. fresh lemon juice
2 Tbsp. honey
2 tsp. Tabasco sauce
1 tsp. minced lemon zest
2 tsp. extra-virgin olive oil

Season chicken with salt and pepper. Stir together panko, garlic, and oregano; place in a shallow dish. Dredge both sides of chicken in panko mixture gently pressing both sides in the crumbs to coat.
Combine lemon juice, honey, Tabasco, and zest for glaze in a small bowl; set aside.
Heat oil in a nonstick skillet over medium heat. Add chicken; saute until browned on both sides, cooked through, about 12 minutes; turning as necessary to provide for even color and prevent scorching. (Chicken should be at 160 when fully cooked.) Remove chicken from skillet.
Add lemon-honey glaze to the skillet; reduce until syrupy, less than a minute. Return chicken to skillet, flipping the pieces once to coat with glaze and serve.
