The best sugar cookies!


I saved the best recipe for last. Baby showers and sugar cookies seem to go pretty well together, so I knew I wanted to make some. I searched around for a recipe, and it didn't take long to find the perfect one. One of my favorite food blogs is Annie's Eats.  I remember seeing some decorated sugar cookies on there. I admit, I usually skim through blogs without reading too much. I'm a picture kind of girl. But since I've been blogging I have been reading posts a lot more. So I'm progressing.
Back to the story — Annie had tracked down the recipe from a family friend because she loved them so much. I don't hear that too often about sugar cookies, so I thought I would give them a try. She was right. This recipe is delightful and my search is over. The royal frosting post she also found, is exactly what I was looking for. I can't wait to make my next batch, which will be this weekend to hand out for Christmas. I also want to get out my Christmas cookie cutters. I haven't used them yet, and I bought them over two years ago. It's time!


White Sugar Cookies
INGREDIENTS
1 cup unsalted butter, room temp
1 cup powdered sugar
1 egg, beaten
1 ½ tsp almond extract
1 tsp vanilla
1 tsp salt
2 ½ cups sifted flour


DIRECTIONS
Cream butter. Add powdered sugar. Blend in egg, almond extract, vanilla, salt and flour. Chill dough until firm. Roll to ¼" thickness on a well-floured surface. Cut with cookie cutters. Place on greased cookie sheets. Bake at 375° for 8-9 min. Cookies should not brown. Frost and decorate when cool. Yields about 22 cookies.

Royal Icing
INGREDIENTS
4 cups powdered sugar, sifted
2 tbsp. meringue powder
5 tbsp. water


DIRECTIONS
Combine all ingredients in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until the sheen has disappeared and the icing has a matte appearance (about 10 minutes). Transfer the contents of the mixing bowl to an air-tight container. This will be the stiffest consistency of the icing, and at this point it is still too stiff to use for decorating. Add water a very small amount at a time and stir by hand until fully incorporated. Continue until the icing has reached a consistency appropriate for piping. (Remember, if you are having any difficulty piping, it is still too thick. Add a little more liquid and try again.) Using a pastry bag, pipe around the edges of each cookie. Let stand so the icing will set. Make sure to keep the leftover icing covered at all times when not in use so that it does not begin to harden.

Once all the cookies have been edged, transfer some of the remaining icing to a separate air-tight container. Thin out by incorporating a small amount of water at a time, until the icing drips off the spoon easily when lifted and then smooths in with that still in the bowl. If you go too far and the icing is too thin, add more sifted powdered sugar to thicken it again. Once the icing has reached the desired consistency, transfer it to a squeeze bottle (or a plastic bag with a hole in one corner), and flood the area surrounded by the piping on each cookie. If it does not completely spread to the edges, use a toothpick to help it along. Allow to set.

Use the remaining thicker icing for piping decoration as desired. Gel icing color is best as it does not add a significant amount of liquid. Liquid food coloring can be used as well – add powdered sugar as needed to compensate for any thinning that occurs.

An array of mini sandwiches


Another baby shower item. I had made several sweet items for the shower and wanted a nice balance with some savory foods. My Aunt Carol came over to make these. If it weren't for her, these wouldn't of made it to the party, or I would have been really late. Carol did a beautiful job and they were very flavorful. Each had their own distinct flavor; pairing a different herb with the main ingredient. I'll list the recipes separately in case you only want one option.


Mini Cucumber Bites
INGREDIENTS
1 small cucumber, peeled and sliced thinly
½ cup cream cheese, room temp.
1 tbsp. sour cream
1 tbsp. fresh chives, finely chopped or 1 tsp. dried
¼ tsp. garlic powder
¼ tsp. salt or less to taste

¼ tsp. white pepper
⅓ loaf very thin cut whole wheat bread (Pepperidge Farm)
DIRECTIONS
  • Remove excess moisture from cucumbers with a paper towel. Remove crust from bread with a sharp knife. Cut bread into four equal squares or other shapes with cookie cutters. In small bowl, combine cream cheese, sour cream, garlic powder, salt, pepper and chives. Mix well. Spread evenly on bread slices. Top bread with cucumbers and garnish with fresh chives. Cover with a damp paper towel until ready to serve to keep sandwiches from drying out.

  • Mini Salmon Bites
    INGREDIENTS
    2 oz. sliced smoked salmon
    ½ cup cream cheese, room temp.
    1 tbsp. sour cream
    1 tbsp. fresh dill, finely chopped or 1 tsp. dried
    ¼ tsp. garlic powder
    ¼ tsp. white pepper

    ⅓ loaf very thin cut whole wheat bread (Pepperidge Farm)
    DIRECTIONS
    • Remove crust from bread with a sharp knife. Cut bread into four equal squares or other shapes with cookie cutters. In small bowl, combine cream cheese, sour cream, garlic powder, pepper and dill. Mix well. Spread evenly on bread slices. Top with smoked salmon slices and garnish with fresh or dried dill. Cover with a damp paper towel until ready to serve to keep sandwiches from drying out.

    • Mini Ham Bites
      INGREDIENTS
      2 oz. thinly sliced ham
      ½ cup cream cheese, room temp.
      1 tbsp. sour cream
      2 tsp. fresh tarragon
      ¼ tsp. garlic powder
      ¼ tsp. white pepper

      ⅓ loaf very thin cut whole wheat bread (Pepperidge Farm)
      DIRECTIONS
      • Remove crust from bread with a sharp knife. Cut bread into four equal squares or other shapes with cookie cutters. In small bowl, combine cream cheese, sour cream, garlic powder, pepper and tarragon. Mix well. Spread evenly on bread slices. Top with thinly sliced ham and garnish with fresh tarragon. Cover with a damp paper towel until ready to serve to keep sandwiches from drying out.

Pigs in a blanket


Another baby shower recipe. Most of us probably remember these from childhood; cut up hot dogs wrapped in a biscuit and baked. Ahhh, it was a delight. I haven't seen them around in years, almost erased from memory, until Kylie brought a different take on them to work one day. Little smokies wrapped in crescent rolls and baked. Wow, what a treat, and it's slightly more grown-up.

INGREDIENTS
1 pkg of lil smokie sausages
1 can crescent rolls


DIRECTIONS
Preheat oven according to directions on crescent roll package. Unroll dough but leave intact two triangles of crescent rolls. (You will have four rectangles). Pinch the seams together and roll the rectangles out with a rolling pin so you have more surface area to work with.

Using a pizza cutter, cut lengthwise into thin triangles; approximately ten strips per rectangle. Wrap each strip starting at the wider end around the sausage. Place on a baking pan sprayed with non-stick cooking oil. Cook according to package directions.
A good way to keep the little piggy's warm after baking — set a slow cooker to low and place a towel in the bottom and around the sides to prevent soggy rolls. (As seen in above pic). Note: the towel will absorb a lot of moisture including grease. Make sure it's not your best towel or just prepare to wash it well.

Pink punch


Here's the start of many recipes I used for the baby shower. I searched extensively for a punch recipe to make. As much as I love sherbet, I was looking for a drink without it. I found this recipe but don't remember where. I went to so many Web sites, I didn't keep track of it. I put my own spin on this one though. It's a tad on the sweet side, but I think that's what a punch should taste like. A squeeze of lemon would make it even better.

Pink Punch
INGREDIENTS
1 can frozen pink lemonade
1 can frozen pineapple juice
1 small jar maraschino cherries with juice
2 two-liters 7-up

1/2 lemon, squeezed plus thin slices

DIRECTIONS
Mix all ingredients together and voila, pink punch! Serve immediately. Cut the lemon into thin rounds to float for eye appeal. Several hours before making the punch, freeze a round mold filled with a small amount of water and a few tbsp. of maraschino cherry juice to keep the punch chilled.

The baby shower

Today was the big day for my sister-in-law's baby shower. I'll give you a little taste of what went down in the past 48 hours. Lots and lots of kitchen time. Tomorrow, I'll be more thorough with words, and I'll spread the recipes out over the next few days.

baby talk


Baby shower update: Eight baby blocks were assembled and 12 more to go. These are pretty easy to assemble. Just a strip of tape and a little fold 'n tuck.


Cinnamon, banana walnut and chocolate mini loaves were made. These are the shower gifts. I debated about what to do and decided, what better way to say thank you than with food. Yesterday was day 10 of the Amish bread starter I had kept from my previous bread making extravaganza. I'm going with a mini foods theme throughout the party. T-minus three days and counting. I'm so excited!




Lemon powder cookies were also made last night. It's treat day at work today. We are celebrating two birthday's this week, and I had a special request from one of the birthday boy's to make these.

Oh baby, it's a baby shower

I've spent the last few weeks thinking about what I'm going to do for my sister-in-law's baby shower this Saturday. I started to execute my ideas on Friday. (Yes, just four days ago). Slight procrastinator, but I attribute it to the designer in me; over-thinking, research and development. Plus I work great under pressure. I spent my time this weekend building the items below in the computer, printing them out and cutting. Since this is consuming the majority my free time, my posts this week will be all things shower. I'll update throughout the week to show my progress. I may throw in a dinner meal though.
I found the cutest cookie cutters from Cake Stuff a month ago. Now I just need to find the perfect sugar cookie recipe.


My main focus has been on the decorations. Here's where I'm at:
These are baby items cut from tabloid-size paper that will hang from a makeshift clothes line. Now I just need to cut the back sides to match, so they will be two-sided.

Crack(er) jacks

Cracker Jacks
This popcorn is why I am sometimes referred to as a "crack" dealer. I made some for the K-State football game mentioned in a previous post. If you like sweet and salty popcorn, then you'll probably love this version. I think it's a great snack to make for the holidays. You could make a batch, divide it up, and give it away in little gift bags for teachers, family or friends. If that sounds like too much trouble, shoot me a message. I might be able to help you with that.


Crack(er) Jacks
INGREDIENTS
12 cups plain popped popcorn (approximate)
1 cup salted peanuts
½ cup unsalted butter
2 cups dark brown sugar (approximate)
¼ cup dark corn syrup
½ tsp. pure vanilla extract


DIRECTIONS
Preheat the oven to 250°F.
Spray a sheet pan with nonstick spray and line with parchment paper. Spray the parchment paper with nonstick spray as well and set aside. After your popcorn is popped, go through your popcorn throughly to remove any kernels that didn't pop.
  Combine the popcorn and peanuts in a large mixing bowl. Set aside until ready to use. Melt the butter in a medium saucepan over medium heat. Add the brown sugar, corn syrup and vanilla and stir until combined. Heat the mixture until it reaches 250°F, approximately 10 minutes.
  Pour the syrup over the popcorn and stir to combine. You will need to work quickly because the syrup hardens rapidly. Spread the mixture onto the prepared sheet pan and bake in the oven for 1 hour. Cool completely. Break into pieces and serve immediately or store in an airtight container for 2 to 3 days.

A little one arriving soon


My older brother Jeff and his wife Candice are expecting a little baby girl in January. I'm throwing her a baby shower in December, so I sent invitations out last weekend. I love doing things like this for family and friends. I enjoy the feeling of giving them something I've created. It's very personal, and it's for someone I love. Double bonus. I'm not a Hallmark card kind of girl and feel as though I need to use the talents God has given me, so I make 'em.

I've seen onesie invites before, but wanted to put my own spin on it. I'm happy with the way they turned out and I got to practice my exacto cutting skills.



On a side note, I take a lot of my shots on the dining room table. My Uncle Tim built the table out of reclaimed barn wood from my grandparents' old barn. It carries a lot of sentimental value to me and it's absolutely beautiful.
