A family staple growing up, this is another one of my comfort foods. I've changed the recipe up a bit since I'm not a fan of mushrooms, (no cream of mushroom) and I try to cook with ground turkey instead of ground beef whenever possible. It's an easy meal to make during the week. You can always use lean ground beef if ground turkey is not your thing.
Tater Tot Casserole
INGREDIENTS
1 1/2 lb. lean ground turkey
3 celery stalks, chopped
1 medium onion, chopped
1 can cream of celery
1/2 can cream of chicken
1/2 bag frozen tater tots
2/3 cup milk
1/2 cup sharp cheddar, shredded
DIRECTIONS
Preheat oven to 375 degrees. In a large skillet over medium-high heat, brown the ground turkey with the onions and celery; season with salt and pepper to taste. Add cream of celery, cream of chicken and milk to the skillet; mix well. Cook for a few minutes until heated through.
In the bottom of a 2-quart casserole dish, arrange tater tots to cover bottom of dish completely. Spread turkey mixture evenly over the top of the tater tots. Sprinkle with cheese. Bake for 20 to 30 minutes until cheese is bubbly and slightly brown.
Can I just pay you to make me lunch every day?
Wow, that is a completely different approach than I was raised on! I think I'll call it "Upside Down Tater Tot Casserole". Will definitely try this next time...
