Corn chowder with chilies

Another favorite from the Pioneer Woman. I'm pretty sure everything I've made from her recipe collection I've loved. A friend and I were talking about making corn chowder, fitting for this time of year. I bookmarked this recipe from her post several months ago. It's my first time making the chowder and now it's one of my favorite soups. Creamy, spicy and full of flavor plus it makes enough to feed eight or in my case plenty of leftovers.


Corn Chowder with Chilies
from the Pioneer Woman
INGREDIENTS

2 slices bacon, cut into 1/2 pieces
2 tbsp. butter
1 1/2 whole yellow onion, diced
4 cups frozen corn or 5 ears shucked
2 whole chipotle peppers in abodo sauce, finely diced
1 4-oz can diced green chilies
32 oz low-sodium chicken broth
1 1/2 cup heavy whipping cream
1/2 tsp salt
3 tbsp. corn meal or masa
1/4 cup water

DIRECTIONS
If you are using ears of corn, slice the corn kernels off the cob and set aside.
Add bacon pieces to a pot over medium heat. Cook for a few minutes. Add diced onion and stir, cooking onion for 5 to 6 minutes. Add butter and melt. Add corn, stir and cook for one minute. Add both kinds of chilies and stir.
Pour in chicken broth and cream. Add salt. Stir and bring to a boil. Reduce heat to low.
Combine cornmeal (or masa) with water. Stir to combine, then pour into chowder. Cover and cook for 15 minutes over low heat. If you want your chowder thicker, add another tbsp. of cornmeal mixed with water. Cook for another ten minutes and serve.

Tangent Lab — Final Friday


I've been out of commission this week with the sickies. Luckily by Friday I was feeling much better. Last night was the Final Friday gallery crawl around town. I submitted a few of my photography prints for Tangent Lab's juried photography contest. There were over 250 images entered for consideration. 50 prints were selected to be framed and 50 prints were displayed digitally. I was fortunate enough to have two of my pieces selected for the show — one framed piece and one digital piece. This is the first time I've submitted my photography work for an exhibit. I have thoroughly enjoyed the process from start to finish. This experience has heightened my senses to a new realm I want to be in, and I'm going to run with it.

Really stellar work at this exhibit. One of my favorite prints is the orange and blue photo in the middle from Justin Ochs.

This is a touchless screen. You simply move your finger to the image you want enlarged, and poof there it is.

lovable, cuddly and edible


As I began this project, I viewed it as a delicate sculpture instead of a cake. There was a lot of thinking involved — specifically on how to execute — and some sketching of course. I'll walk you through the process in pictures.

The prep work. I made the cakes and fondant the night before. I like the baked cake to sit overnight so it's completely cooled, and one step is out of the way.

And left the kitchen like this. The unexciting part of decorating is cleaning the aftermath. BTW, I use canned frosting to act as a bond between the cake and fondant. I could make my own icing, but I found it best to devote more time to the cake than making icing. Plus Duncan Hines is a pro at it.



The teddy's blanky. I use food coloring mixed with water and a paintbrush.

I find it funny that the fondant is rather lumpy. As someone pointed out to me at the party, it helps it look like a stuffed bear. I'm sticking with that one.

Alexis' mess cake

I had quite a bit of leftover cake from all the carving, so I made cake balls. I added the rest of the icing to the cake, mixed it together, rolled it into balls and dipped them in white chocolate. Voila!

Happy Birthday to my sweet niece Alexis! She turned one today. This picture is from her birthday party a few hours ago. Also, here's a sneek peek of the cake I made. I'll do a full post tomorrow, but tonight I am one tired cookie. I'm going to spend my evening chillaxin' and watching Netflix.

What's it gonna be?


For the next 20 hours (including sleepy time) I will be shaping and creating these cakes into one cake for my niece's birthday tomorrow. Alexis will be one!! Any guesses on what it might be? If you already know the answer because I told you or you saw me post about it on Twitter, maybe you can make something else up!
This is going to be quite the cake if I can pull it off. What I have in my head looks pretty cool. Hopefully when I'm done, it will look fairly close to my mental picture. I need to do some sketching to work out the details. I'll create a post this weekend, to talk about the process and to show you the finished product - regardless of the outcome. :)



I've been printing more of my photography lately — gearing up for an Etsy shop — and I wanted to frame one to have in the house. This the first print of mine I've had framed! Pretty exciting. It's hanging in my bathroom. The wall across from it is close to the color of peanut butter. It's the chocolate, peanut butter bathroom.

Yes, Pioneer Woman is a food genius. This recipe is so easy to make. My house was filled with the smell of cobbler and berries baking in the oven last night. Slightly tart and sweet, this cobbler may become a staple in your house. You can use whatever berries you prefer. I used a combination of blackberries, raspberries and blueberries. I happened to have those three in my freezer. I love the recipes I already have all the ingredients for! Best served warm with a splash of heavy cream, a dollop of whipped cream and some ice cream! You can never have too much cream. 


Blackberry Cobbler
from the Pioneer Woman Cooks
INGREDIENTS
1 stick unsalted butter, melted
1 1/4 cup 
plus 2 tbsp. sugar 
1 cup self-rising flour
1 cup milk 
2 cups fresh or frozen blackberries, raspberries and blueberries


DIRECTIONS

Preheat oven to 350 degrees. Grease a 3-quart baking dish with butter.
Place the stick of butter in a microwave-safe dish. Heat until melted. 
In a medium bowl, whisk 1 cup of the sugar with the flour and milk.
Whisk in the melted butter.
Rinse the berries and pat them dry.
Pour the batter into the baking dish and sprinkle berries over the top of the batter.
Sprinkle 1/4 cup sugar over the berries.
Bake for one hour, or until golden brown and bubbly. With ten minutes left of cooking time, sprinkle the remaining 2 tbsp. of sugar over the top.
Serves 8.

Back to vintage

Wow. Have I been on blog vacation or what? This month has flown right by me. I've been so busy with life and work and trying to make changes to current situations. I'd love to talk about them, but I can't until things are for certain. I will say I submitted some of my photography to a local (and my favorite) art gallery Tangent Lab for a juried photography contest. It's my first year entering, and I made the cut! I'm not sure what was selected or how many. I will find out later today and am so excited for it. The show will be at the end of the month. I'll definitely be taking pictures of the event!
This weekend is pretty low-key for me, and it feels great. I get tired of the rush-rush need to do this and that. Before I know it, the weekend is over, and I'm back at work. This weekend is welcomed. Today, I went to an antique mall and browsed for three hours. These are my finds.

I'm always on the lookout for fun type blocks. F is the start of my last name if you didn't know. 



The ceramic bottle on the left I purchased some time ago at a Goodwill store. I was lucky enough to find the perfect match for it today - the white one on the right. Now I need one more to make the set complete – something smaller though.



I don't own too many thermoses. I'm very particular about the look of them. This one is in great condition and the price was just right. 



Finally!! I found top No. 3 to complete my set. Hmm, maybe I'll go for five. It's one I've seen all over etsy and ebay but wasn't willing to pay $15 for it. I got this one half off. Score! The other two tops are here and here. I love vintage toys. The graphics are fun and I'm drawn to the materials they're made out of, instead of the plastic toys nowadays. I don't have kids, but when I do, they will have a kick-ass decorated room. The item on the right is a balloon pump. 



Is this not the cutest clock? I remember one from my childhood. I'm sure that's also why I'm drawn to these toys. I'm very happy with my finds today. Happy Saturday!

Here are some letters I've recently created for my niece and nephew. I've also created a different concept using old wooden blocks. These are two of the many items I'll be listing on Etsy soon. I hope your Saturday is nice and relaxing so far.



This is the first letter for a boy I've created. Cole loves his trains. I have some great ideas for other boy letters around themes and patterns — looking forward to making more.



Morgan's favorite color is purple, probably because of the K-state Wildcats.

Family time


My niece Breyya flew in from South Carolina for a week to visit and have Christmas with us. She went back to South Carolina yesterday. She's nine and will be ten on January 13. Breyya means so much to me. I had to share her with other family members, so I didn't have her for the entire week, but we got to spend the weekend together. I didn't take too many pictures, just a few with my point and shoot. On Saturday, family came over and we played Wii most of the evening. It was my first time playing. I really liked it, except my arms were so sore for the next three days – apparently I'm out of shape.



Yes people. This is me in raw form. No makeup – I can't believe I actually posted this. But aren't the girls so cute?
On Sunday, Breyya and I spent the day together. We went to the movies and saw Gulliver's Travels. It was her pick. We both really liked it. It was light, humorous and Jack Black is a goofball.

After the movie we ate at Jose Peppers and shared a taco salad. Breyya really wanted one. I knew it would be too much for her to eat so we split it. We couldn't even finish the plate! I do think she ate more than I did though. That evening we watched Enchanted while taking the Christmas tree down. After the tree was down, I realized I did not take one single picture of my tree this year. I even had new ornaments! I guess there is always next year.
