Restaurant style salsa
I love chips and salsa. Who doesn't really? Apparently, The Pioneer Woman and I share the same passion in salsa. I found her recipe and knew I wanted to make it immediately. Restaurant style — it just sounds good. It was everything I hoped for in a salsa. It has nice heat and very flavorful. If you don't want the heat, just omit the jalapeno.
This recipe made two large mason jars full, so it will last awhile. We've went through a bag of chips and have one mason jar left. It's really hard to stop eating - just the same as being at a Mexican restaurant. If you want step by step picture instructions visit The Pioneer Woman's recipe. I'm not even trying to compete with those gorgeous photos.

Restaurant Style Salsa

INGREDIENTS
1 - 28 oz. can whole tomatoes with juice
2 - 10 oz. cans Rotel (diced tomatoes with green chilies)
1/4 cup onion, chopped
1 clove garlic, minced
1 whole jalapeno, seeded, quartered and sliced thin
1/4 tsp. sugar
1/4 tsp. salt

1/4 tsp. ground cumin (or more to taste)
1/2 cup cilantro (or more to taste)
1/2 whole fresh lime juice

DIRECTIONS
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

All she wants to do is dance

My niece Morgan was in a dance recital recently. (Earlier this week I had posted a photo, but here are the rest). It's such an interesting environment when the kids are backstage getting ready. Make up, hair, nerves, excitement, kids and parents everywhere. The recital lasted almost three hours with 40+ different performances. WAY to long if you ask me, but we were there to support Morgan so it didn't really matter. When I was six (or close to it) I did dance one year. The first two pics are of me at my performance. I still have my little light blue outfit. It's hanging in my closet.

Orange creamsicle cookies

Orange Creamsicle Cookies
This cookie has made it into my top five favorite cookies. After I pulled them out of the oven, the aroma of orange zest filled the room. I let them cool slightly and began transferring them to a cooling rack. Of course I had to try a warm cookie — oh but there was no way I could stop at one. I will not admit how many I indulged in that evening, but it was enough to feed a small village. Kidding. I'm not a huge white chocolate fan but paired with orange, it's quite amazing. 


Orange Creamsicle Cookies

INGREDIENTS
2 1/2 cups all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
2 sticks unsalted butter, softened
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 large egg
1 tsp. vanilla extract
2 tbsp. orange zest (2 oranges)
2 cups white chocolate chips (or vanilla chips)



DIRECTIONS
Preheat oven to 375 degrees. In a small bowl, Combine flour, baking soda, and salt. Set aside.
In a large bowl, cream butter and sugars until light and creamy.
Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and chips.
Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8-10 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container.

Vintage items and random finds 2 of 2


Here is part 2 of yesterday's post on recent finds.

I haven't bought (or found) a camera for my collection in awhile. I was very happy to stumble upon this Polaroid One Step Land Camera.


Then I found this Kodak Instamatic 104. I love the way it looks. I've seen this model several times before but the price was too high for me.


Set of four Cheinco sugar, flour, coffee and tea canisters in good condition. Some rust here and there, but it just adds to its character. I'll re-list these soon.


More glass bottles. I have to stop buying these! I just can't say no to these beautiful shapes.


It's all in the details.


This is one rusted lamp, but I got it for a buck and it will look great in the garage.

Vintage items and random finds 1 of 2





Seven-piece vintage mugs with four different flower colors; blue, orange, green and yellow. I thought these would go great in someone's kitchen. The mug shape is really fun. I'll be listing these items for resale soon.


A vintage toy drum for my small toy collection.


More glass containers for an art project I hope to start soon.


I purchased this beauty for a friend. She collects them. The price was so low I couldn't refuse.


This little guy is less than 2 1/2 inches. I bought this for my aunt. I think it'll go perfectly in her house.


I've thought about painting our bedroom for over a year now. I know exactly what I want to do, I just need to find the right colors. This piece is a start in the right direction. Baby steps.


I found the orange carafe about a week before I found the lemon and lime carafes. I'm really drawn to the vintage graphic pattern and I think others are too. I'll be listing these items for resale soon.
