Cauliflower is one of my favorite vegetables. I have many though. It has a very distinctive taste. Eating it plain is tasty (with a little ranch), but adding a few ingredients takes it to a whole new level. For an added bonus — it's rich in vitamin C and very low in calories; a great snack when you're feeling hungry.Oven-roasted Cauliflower
INGREDIENTS
1 medium cauliflower, broke into florets
⅛ to ¼ cup extra-virgin olive oil
2 cloves garlic, sliced
2 tbsp. fresh lemon juice
1 tsp. salt
½ tsp. fresh-ground black pepper
2 tbsp. grated parmesan
DIRECTIONS
Preheat oven to 500 degrees. Place the cauliflower florets in a large roasting pan or baking sheet with raised sides. Drizzle olive oil over the cauliflower and season with garlic, lemon juice, salt and pepper. Place in oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the parmesan. Serve immediately.
